I wrote this post before going to the hospital because I had a feeling that I might be a little busy for a while .
Since we knew the actual day that we would be going to the hospital and my doctor had warned us that we might be there a while, I thought it might be a good idea to make some “sorry for being a terrible patient” cookies for the nurses. I turned to Pinterest for ideas- I was looking for something a little bit unique so that they could tell I put some effort in but nothing too weird that they wouldn’t want to eat.
I found this Cookies n Cream cookies recipe and made one batch following the recipe exactly and then one with a few tweaks. I know that white chocolate can sometimes be a little much for people and I figured that variety is always appreciated.
Ingredients:
- 1 cup light brown sugar
- 1 cup sugar
- 1/2 cup butter
- 1/2 cup oil
- 2 eggs
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. baking powder
- 2 tsp. vanilla
- 1 tsp. almond extract
- 3 cups flour
- 1 bag semi sweet chocolate chips
- oatmeal (to taste, I probably used 1 1/2-2 cups)
Instructions:
- Preheat oven to 350.
- Cream butter, oil and sugars.
- Add eggs and beat until fluffy.
- Add remaining ingredients.
- Place on greased cookie sheet and bake for 7-9 minutes.
- ENJOY!
I made them a little bigger than average and between the two batches, I ended up with 76 cookies total. They were a big hit (both with the nurses and my family) and hopefully they made up a little bit for any bad behavior on my part while we were at the hospital.
